Fresh Tomato Snacks

tomatoesOne of my favorite things about summer is getting fresh, homegrown tomatoes.  I used to eat them with cottage cheese, homegrown cucumber, and a mixture of mayonnaise and ketchup as a dressing.  Now that I know my body doesn’t respond well to dairy, I have found several other ways to eat fresh tomatoes.   Try these ideas for delicious, easy snacks with homegrown tomatoes from your farmers market.

Tomatoes and Sauerkraut

This is a simple way to get some cultured veggies which aids digestion, and this dish  also supports weight control/loss.

Slice a fresh tomato and place on plate.  Put a tablespoon of sauerkraut on each slice of tomato and top with either a slice of avocado or an olive (I can get homemade sauerkraut at my farmer’s market but if you don’t have that option, you can get sauerkraut from your health food store).  You’ll be amazed at how good this is!

Mini Guacamole Salad

Place several organic romaine lettuce leaves on a plate.  Slice a homegrown tomato into thin slices and place on lettuce.  Add a tablespoon of homemade guacamole on each slice of tomato and top with an olive. 

Homemade Guacamole

  • 1 ripe avocado
  • 1/4 diced sweet red onion
  • 1 clove minced garlic
  • 1/2 teaspoon Himalayan salt or Celtic sea salt
  • Cumin, chili powder to taste*


Mash avocado with a fork in a small bowl.  Add rest of ingredients and mix well.

*You can also use something like Frontier’s Mexican Seasoning or Penzey’s Southwest seasoning.  

Remember, eating raw and living foods doesn’t have to be complicated.  Creating easy snacks like these are one of the things I love about eating a predominantly raw food diet.  They’re simple, delicious, filling, and do wonders for your body!
